Latvian Oven-Baked Omelette with Condensed Milk
This recipe combines classic omelette techniques with the tender sweetness of condensed milk. Perfect for a cozy breakfast or a light dessert.
Ingredients:
- 4 eggs
- 100 ml sweetened condensed milk
- 50 ml milk
- 1 tbsp butter
- pinch of salt
- 1 tsp sugar (optional)
- fresh herbs for garnish (parsley or dill)
Instructions:
- Preheat the oven to 180°C (350°F). Place a piece of butter in the baking dish and put it in the oven for 5 minutes to melt and grease the sides.
- In a bowl, beat the eggs with a pinch of salt and sugar (if using) until lightly frothy.
- Add the milk and condensed milk to the eggs and gently whisk until smooth.
- Pour the egg mixture into the preheated, greased baking dish.
- Bake at 180°C (350°F) for 20–25 minutes until the omelette puffs up and is golden on top.
- Remove the finished omelette from the oven, let it rest for 2 minutes, then sprinkle with chopped herbs and serve hot.
