Latvian Oven-Baked Omelette with Condensed Milk

This recipe combines classic omelette techniques with the tender sweetness of condensed milk. Perfect for a cozy breakfast or a light dessert.

  1. Preheat the oven to 180°C (350°F). Place a piece of butter in the baking dish and put it in the oven for 5 minutes to melt and grease the sides.

  3. Add the milk and condensed milk to the eggs and gently whisk until smooth.
  4. Pour the egg mixture into the preheated, greased baking dish.
  5. Bake at 180°C (350°F) for 20–25 minutes until the omelette puffs up and is golden on top.
  6. Remove the finished omelette from the oven, let it rest for 2 minutes, then sprinkle with chopped herbs and serve hot.
